Crustless plums au gratin

It is that time of the year when the days are getting darker, it’s raining outside and all I want to do is snuggle up on the couch with a soft blanket, a book and some tea with cake. This cinnamony, 30-minute plum gratin is just perfect for that if you don’t want to spend hours in the kitchen.


 

Ingredients

600g plums

1,5 dl sour cream

2 eggs

40 g brown sugar

1/4 tsp cinnamon

1/2 lemon zest, grated

1 Tbsp vanilla pudding powder

1 tsp butter

icing sugar & cinnamon for dusting


Instructions

Preheat oven to 200C. Grease a 26cm tart pan with some butter. Wash & dry plums, then slice them into quarters. Arrange plum slices in circles in the greased baking pan.


In a medium bowl mix together sour cream, eggs, sugar, cinnamon, lemon zest and the pudding powder. Once all combined, pour the mixture over the plums.


Bake for about 20 min in the middle slot of the oven. When it‘s done baking, dust with cinnamon & icing sugar. If desired, make a vanilla sauce with some left over pudding powder and milk.


Serve warm & enjoy!
